Butter a baking dish and place your whiting fillets at the bottom. Slice your tomatoes, then peel and chop the garlic and onions, and place them around the whiting fillets. Season with salt and pepper, then drizzle with 20 cl of white wine and one whole squeezed lemon. Cut the remaining butter into pieces and distribute in the dish, then bake for 25 minutes, remembering to baste the fish regularly with the juices.
