Prepare the pâte brisée by mixing the flour, very soft butter, and salt by hand.

When the mixture resembles sand, add a little water, knead until a homogeneous ball of dough forms, and stop.

Roll out the dough and place it into a 24 cm tart mold (greased and floured).

In a mixing bowl, crush the boursault with a fork, add the beaten eggs, season with pepper, and sprinkle with paprika.
