Date Cakes (Makrout)
Easily prepare the Makrout, the Eastern pastry filled with dates!

Work the butter and powdered sugar until they form a creamy mixture.

Add the egg yolks, yeast, then sift in the flour little by little and mix well until you obtain a homogeneous dough.

Roll out the dough to a thickness of 3mm with a rolling pin, cut circles of 8cm diameter using round cookie cutters.

For the filling: wash and seed the dates, cook them steamed (for example in the top part of a couscous steamer), blend them, add the powdered cinnamon, orange blossom water, and knead well to obtain a soft paste.

Form date dough into small rolls, place one in the center of each circle of dough, fold these circles in half, seal the edges well. Place them on a buttered tray as they are made.

Bake in a moderate oven, roll them while still warm in powdered sugar.

Store them in a tightly closed container.
