    In a large pot, sauté the chorizo slices in hot oil without any fat on high heat.

    Sauté for 5 to 6 minutes and add the minced onion, a pinch of salt, and cook until they are also golden brown (4/5 minutes).

    Drain your peas and add them to the pot with half a glass of water;

    Stir everything together and let it simmer on low heat for about 6 to 7 minutes.

    Empty the cooking liquid from the pot and keep it in a bowl.

    Pour an egg into the center of the preparation and cook until it is well done.

    Season to taste and add the cooking liquid as needed.
