    In a sauté pan, slowly soften the onions in olive oil, add minced garlic, chopped chorizo, and 3 handfuls of finely shredded roquette.

    Cook everything together.

    Add the rice and stir until it becomes translucent.

    Pour one ladleful of broth at a time, cook while stirring until it evaporates, then add the remaining liquid and gently cook the rice until all the broth has disappeared.

    Once the rice is cooked and creamy to your liking, incorporate the ham, tomatoes, remaining roquette, Parmesan, and mascarpone.
