    Soak separately in hot water for about twenty minutes, the mushrooms and the vermicelli.

    Then chop them.

    Chop the pork meat and the onion.

    Peel and grate the carrot.

    Chiffonade the Parsley.

    Mix all these ingredients in a bowl adding the egg, salt, and pepper.

    Then knead everything with your fingers.

    Soften the rice crepes by wrapping them in a damp cloth.

    Place a tablespoon of filling on the front of each crepe and roll it up.

    Heat oil in a wok pan and fry the nems 4 at a time for 15 minutes, stirring regularly.

    Drain them on absorbent paper.

    Arrange the rolls on lettuce leaves.

    Garnish with some mint leaves.

    Serve with soy sauce!
