Chop the onion and slice your pork tenderloin thinly.

In a large container, add the onion, pork, 2 teaspoons of chili paste, curry, and ginger and mix.

Let the mixture marinate for 10 minutes, peel the pineapple, cut half into thin slices and the other half into small pieces.

Drizzle olive oil in a Dutch oven, then cook everything until the meat is browned on all sides.

Add the bamboo shoots, pineapple, and 400 gr of coconut milk, then simmer for 30 minutes, and don't forget to season with salt and pepper!
