Prepare the onions, bell peppers, and eggplants to cut them into 1 cm cubes.

Sauté in a cast-iron pot on low heat with the oil.

Peel, roughly core the tomatoes.

Peel, cut the zucchinis into cubes.

Add them to the pot with the bay leaf after 15 minutes of cooking, cover 4/5 full.

Let it simmer for 25 minutes, stirring occasionally (add fresh thyme halfway through cooking).

Peel the asparagus and cook in a pressure cooker for 12 minutes. Add the asparagus to the vegetables 5 minutes before serving, adjust if necessary.
