    Peel the rhubarb, cut the skin at one end of the stalk and pull it off in one piece.

    Do the same around the stalk, then take it in the other direction and repeat the operation.

    Cut the stalks into 4 cm pieces.

    Blanch them for 2 minutes in boiling water.

    Let them drain.

    Preheat the oven to thermostat 7 (210°C).

    Generously butter a porcelain, Pyrex or earthenware mold, dust it with sugar.

    Split the vanilla pod in half and scrape out the tiny black seeds using a small spoon or knife.

    Break the eggs into a bowl, add the flour, milk, cream, sugar, salt, as well as the vanilla seeds and cinnamon.

    Beat the mixture with a fork.

    Pour this mixture into the dish.

    Arrange the rhubarb pieces on top.

    Gently press them slightly into the batter.

    Slide the dish into the oven and bake for 40 minutes until the dough puffs around the rhubarb pieces and is well golden brown.

    Sprinkle the cake with powdered sugar as soon as it comes out of the oven and serve warm or cold.
