Peel the garlic clove, then chop it.

Toast the pine nuts in a non-stick pan.

Cut the smoked bacon (without the rind) into small sticks and fry them in the pan with the oil.

Wash and dry the spinach, then quickly sauté them in hot butter in portions in the pan.

Add the garlic and bacon bits.

Fold in the cream, pine nuts, and raisins, mix well.

Season with salt and pepper.

Slice the goat cheese log into rounds.

Butter a tart mold, line it with the pastry, brush the edges with egg yolk; and pre-bake for 15 minutes in a hot oven (thermostat 7/8).
