Mix the brousse and the egg yolk.

Season with salt and pepper.

Add the chopped spinach (and possibly a bit of grated gruyère and/or parmesan) and reserve this filling.

Prepare your tomato sauce.

Layer the bottom of a gratin dish with a thick layer of it.
