    Melt half the butter in a large pot, add chopped shallots with a bit of parsley, and gently sauté them, then add the rolled and tied beef, and sear it slightly on all sides.

    Cover the pot halfway.

    Let it cook for 15 minutes first, then add peeled girolles, salt, and pepper.

    Cook for another 45 minutes, keeping an eye on it.

    Place the beef on a heated large platter, surrounded by girolles.

    In a large bowl, mix cream with lemon juice.

    Pour the contents of the pot where the beef was cooked into a heated serving pot and heat while stirring until boiling.

    Serve in a heated gravy boat at the same time as the beef.
