    Cook the fish in a steamer (or couscoussière) for 10 to 15 minutes depending on its thickness.

    Chop the garlic into pieces and finely slice the ginger.

    Pour the oil into a heated pan, then add the garlic and ginger.

    Add 4 tablespoons of sugar, 30 cl of water, and mix well.

    Once the mixture is homogeneous, pour in the soy sauce (6 tablespoons), half a bunch of coriander and chives.

    Cook your Thai rice to perfection (9 to 11 minutes), serve 50 to 70 gr per plate, then place the fish on top and cover with the sauce.
