Dry the cod fillets with paper towels.

Season both sides with salt and pepper, then brush them with lemon juice.

Let it stand for 10 minutes.

Preheat the oven to 210°C.

While doing this, prepare the sauce by making a roux: melt 30 g of butter in a saucepan.
