A unique original recipe perfect for an dinner appetizer: homemade herring fritters!

Salt the cod in a large bowl for 24 hours before cooking, changing the water 4 to 5 times.

Mix in a terrine the sifted flour, warm milk, eggs, and salt until you obtain a homogeneous dough.

Let it rest for 20 minutes.

Place the cod in a pot of cold water and heat without bringing to a boil.

Drain, remove the skin and bones, and crush it in a mortar with a large garlic clove and a small bunch of chopped scallions.

Mix the preparation into the rested dough and season generously with pepper.

From the resulting mixture, make balls the size of a walnut and plunge them into hot oil for frying.

When the accras are well golden, remove them and drain on a lined sieve with absorbent paper at the bottom.

Serve hot with slices of lemon.
