Soak the cod (24 to 48 hours before).

Cook it very gently in milk with diced potatoes (peeled beforehand).

After cooking, mash everything using a food mill or fork (depending on your equipment) and add the butter, egg yolks, and cream.

If the preparation is too thick, add some warm milk.

Beat the whites to stiff peaks and fold them in gently.

Grease a mold and line it with grated gruyère.
