Prepare the aromatic filling: peel the carrots, onions, and garlic cloves.

Slice the carrots into strips, chop the onion, and finely chop the garlic.

In a frying pan, heat the olive oil, sauté the aromatic filling then set it aside.

In a casserole, brown the lamb shanks with 15 g of butter, set them aside and deglaze with white wine; reduce well.

Add to the casserole the aromatic filling, the lamb shanks, the beef broth diluted in water (to cover the lamb shanks), and the cumin/curry.

Bring the contents to a boil then bake at 150°C (Th. 4) for 3 to 4 hours.
