Beef and Lamb Tajine with Candied Lemons
A chicken and lamb tajine that you will enjoy sharing!

Heat the oil in the wok and brown the chicken then the lamb.

Reserve and keep the cooking oil, sauté the onions and carrots cut into large pieces for 5 minutes.

Reserve with the meat.

Then sauté the zucchini and eggplant (also cut into large pieces) for 2 minutes.

Put back the meat, onions, and carrots in the wok, add the spice packet, a bit of salt, mix well and let cook for another 2 minutes.

Add the peeled tomatoes cut into small pieces, 1/4 liter of water, and the raisins.

Cover, lower the heat, and let simmer for 35 minutes.

10 minutes before the end of cooking, remove the lid, add the honey and sliced lemons, and the chickpeas.

Just before serving, sprinkle with chopped coriander.
