    Make the doughnut dough: Crumble the yeast in a bowl, add warm water, and mix.

    Cover and let it sit for 10 minutes in a warm place.

    In a shallow dish, sprinkle sugar and half a glass of calvados.

    Peel 5 apples (keep the peels and cores).

    Cut them into quarters and soak them in the sweet alcohol. Mix the leavening with sifted flour, half a teaspoon of salt, 15 cl of water: by hand then with an electric mixer.
