Melt the chocolate, broken into small pieces, in a stainless steel bowl placed over a bain-marie with water.

The water bath should not be too hot so that the chocolate retains its aroma.

Let it cool down.

Add the sugar, ground hazelnuts, and whipped cream.

Line a springform pan with buttered aluminum foil.

Arrange madeleines in the bottom of the pan in a rosette pattern. Soak them briefly beforehand in pineapple juice (or kirsch diluted with water if desired).

Pour over the prepared cream and cover with soaked madeleines.

Refrigerate until the next day, then unmold onto the serving plate.
