Cook the salmon by steaming, flake into small pieces, then fry in a sauté pan without any fat. Drain on absorbent paper and set aside. Wash the mâche. Clean and slice the mushrooms, then sauté and add the salmon until it is golden brown. Season the mâche with olive oil, walnut oil, and balsamic vinegar. Add the preserved tomatoes. Sprinkle with yeast and mix. Arrange a bed of mâche in 2 plates, distribute the mixture: salmon-mushrooms on top.
