How to prepare Indian crème brûlée?

    In a saucepan, place the ground almonds, milk, and 15cl of thick cream.

    Place the cardamom pods in a tea strainer then add to the mixture.

    Let it boil for 10 minutes then remove the cardamom sachet.

    Add the almond extract and beat the egg yolks with sugar in a bowl.

    Pour the contents of the bowl into the saucepan, along with the remaining 10cl of cream, then let it cool.

    Fill four pots three-quarters full with the cream mixture.

    Bake for 45 minutes at 120°C using a water bath, let it cool, and before serving, sprinkle cinnamon on each pot and caramelize in the oven or with a culinary blowtorch.
