How to prepare Beer Rabbit?

   In a large high-sided casserole, pour in the olive oil and heat over high heat.

   Place the rabbit pieces and brown them on all sides.

   Set aside in a deep dish.

   Sauté the onions in the hot oil, then add the mushrooms.

   Scrape the bottom of the casserole to deglaze well with the meat juices.

   When the onions are soft, pour in the flour all at once and off the heat, mix vigorously.

   Return to cook for about 10 seconds, and when the mixture thickens, pour in the reconstituted broth without waiting for it to come to a boil with the cube and water.

   Let the sauce thicken on medium heat for 5 minutes, then add the beer.
