Rinse your sauerkraut under water to clean it and dry it with a towel. In a heated pot or casserole, place a tablespoon of lard followed by your bacon and onions. Add the sauerkraut, peeled and chopped apples, and juniper berries for flavor. Pour a base of white wine (Riesling recommended) to soak and simmer on low heat for 1 hour and 30 minutes, stirring frequently. Meanwhile, in boiling water, cook your pork shoulder (for 1 hour and 30 minutes) and Morteau sausages (for 30 minutes), then add them to the sauerkraut with the raw hock and let it cook for another 1 hour and 30 minutes with the lid off (to evaporate the water). Boil the other sausages in a pot of boiling water for 10 minutes, and cook the potatoes (peeled) until they are tender. Warm the black pudding in simmering water (not boiling to avoid bursting the skin). Place the black pudding and sausages on top of the sauerkraut in a large dish and serve hot.
