Peel the onion, chop it and sauté it with the oil in a skillet until it turns golden brown.

Add the carrots, zucchini, and chopped tomatoes, and cook covered on low heat for 10 to 15 minutes.

Season with salt and pepper, add ground cumin and coriander seeds, and continue cooking covered for about 10 more minutes while being careful not to let it stick.

Add the lemon juice and 2 cups of water, then bring to a boil.

Boil until simmering, then remove from heat and add the semolina.

Let it swell, then fluff with a fork.

Serve after garnishing with some cilantro leaves.
