Salmon Endive Tart
Prepare a luxurious spring meal with the endive and salmon tart.

Rinse, dry, and chop the endives.

Melt the butter in a sauté pan.

Add a squeeze of lemon juice and the chopped endives.

Cover, then cook slowly over low heat for 5 minutes.

Add the cream and sugar, season with salt and pepper.

Continue cooking uncovered for 10 more minutes.

Preheat the oven to setting 7 (210°C).

Unroll a pastry disk and line a 26 cm diameter tart mold.

Prick the bottom with a fork.

Cut the salmon steak into slices and arrange them over the pastry.

In a bowl, beat the 2 eggs.

Mix them with the warmed endives.

Pour the mixture over the salmon.

Unroll the second pastry disk and cover the tart.

Seal the two pastries by pressing the edges together with a fork.
