    Thaw the spinach.

    Squeeze out excess water and sauté in a pan with one tablespoon of olive oil.

    Add salt and pepper.

    Mix everything then chop finely with a knife.

    Let it cool down.

    Put the obtained preparation in a bowl, add 2 large gervais, mace, 150g of parmesan and 1 to 2 tablespoons of breadcrumbs until you get a ball.

    Shape into small balls then fill each ravioli with this preparation taking care to close them properly.

    Blanch the raviolis in boiling water for 8 to 10 minutes depending on desired doneness.
