    In a pan, heat 1 tablespoon of olive oil.

    Chop the onion and garlic, and sauté them.

    Add the spinach and cook until they are tender.

    Remove from heat and let cool down.

    Crumbly crumble the feta and add it to the spinach.

    Cut and open the chicken breasts without separating them completely.

    Stuff the chicken breasts with the spinach and feta mixture, then close them using a toothpick.

    In a bowl, pour 1 tablespoon of olive oil, add salt and pepper, and brush this over the chicken.

    Place the chickens in an oven-safe dish, and bake for 35 minutes, checking the cooking.
