    Drain the tuna and break it into pieces

    Peel and finely chop the onion and sauté it in a pan with a little oil until it is golden brown

    Wash the potatoes thoroughly and put them in a pot of slightly salted water, cook for 20 minutes,

    Once cooked, remove the skin and pass them through a food mill to make a puree

  5. 5

    Place the potato puree in a bowl, add the tuna, chopped parsley, fried onion, saffron, cumin, season and mix well

  6. 6

    Shape the mixture into sausage-shaped croquettes about 7cm long and 2.5cm wide, roll them in semolina

  7. 7

    Dip them then in beaten egg whites

  8. 8

    Fry in hot oil until the croquettes are well golden brown

  9. 9

    Drain on absorbent paper and serve hot.
