Cut the chicken pieces into cubes of 2 to 3 cm thick, and slice the leeks into pieces 2 to 3 cm long. Prepare the chicken broth in a saucepan by adding, for every 4 measures of broth, 5 tablespoons of soy sauce, 2 tablespoons of sake, and one tablespoon of sugar. Reduce until you obtain a smooth sauce. Soak your skewers in water, then thread the chicken alternately with leek pieces (folding if necessary). Before grilling on the barbecue or pan, brush the skewers with the sauce. Cook for 10 to 15 minutes, checking that the meat has turned white.
