Zucchini roll with tuna and mozzarella
Prepare these delicious zucchini rolls with tuna and mozzarella for an appetizer.

Slice the zucchini into thin strips lengthwise (it's easier with a mandoline) and place them in a bowl, salting and peppering them as you go

Mix the tuna and mozzarella in a mixing bowl until you get a uniform blend

Quick-fry the zucchini strips in olive oil, then place them on paper towels to drain

Roll up each zucchini strip by placing a small ball of tuna/mozzarella mixture inside it

Place the rolls in a baking dish

Cover the rolls with tomato sauce (you can also omit the tomato sauce for a drier result) and bake the dish until the rolls are well heated

Serve as an appetizer or with rice or couscous.
