    Roll out the pastry into your tartlet molds.

    Prick the bottom with a fork and place some dried beans on top.

    Bake for 20 minutes.

    Bring the milk to a boil.

    In the meantime, beat the egg yolks with the sugar and vanilla sugar until the mixture turns white.

    Add the cornstarch and mix well.

    Remove from heat and pour the milk over the mixture while stirring.

    Place on low heat and stir constantly until the mixture thickens.

    Slice your apricots in half.
