Peel the asparagus and cook them in boiling water for about 20 minutes depending on their size

While cooking the asparagus, in a pan, make a light brown roux with the butter and flour, add milk, season, thicken over low heat while stirring (about 15 minutes), then add the grated cheese

Make 6 crepes, fill them with the drained asparagus and the prepared sauce (1 tablespoon per crêpe)

Roll them up and place them in a baking dish
