Peel and finely chop the shallots, then sauté them in a pan with 25 gr of butter. After 1 minute, pour in the 20 cl of white wine and let it reduce. Once the white wine has reduced and the alcohol has evaporated, add the heavy cream, salt, and pepper, and heat for another 2 minutes while stirring. Spoon a tablespoon of the mixture over each oyster, sprinkle with Gruyère cheese, and bake for 10 to 15 minutes until gratiné.
