Blue Cheese and Pear Tart

Peel the pears.

Core and cut them lengthwise.

Sauté the pears for 5 minutes on medium heat in salted butter.

Remove two-thirds of the pastry, roll it out, and line a baking dish or deep pie plate that can go from oven to table, allowing the dough to overflow all around.

Crush the cheese with a fork, add the cream and eggs, season, and mix in chopped chives.

Pour this mixture over the pastry base.

Add the caramelized pears. Roll out the remaining pastry and cover the filling.

Fold the edges up around the lid all around.

Make a chimney in the middle.

Brush the dough with beaten egg diluted in milk. Bake in a preheated hot oven (200°C) for 45 minutes, protecting the pie with an aluminum foil sheet if it browns too much.
