    Pit the cherries.

    Mix the cherries and sugar in a copper pot.

    Wait about 1 hour for the cherry juice to dissolve some of the sugar.

    Heat the mixture until the jam boils.

    Skim to remove impurities.

    Remove from heat and pour into jam jars.

    Hold the jars with a potholder.

    Close the jars while still hot and let cool.

    Tips: Before storing, make sure the jars are hermetically sealed (vacuum-sealed). To check if the jam is cooked, pour a little on a cold surface.
