Caramel Ice Cream
A delicious caramel ice cream to refresh you this summer.

Heat the milk (do not let it boil).

Whisk the yolks with 150 g of sugar.

Add 1/3 of the milk to the eggs and whisk.

Pour the mixture into the remaining milk.

Prepare the caramel sauce with the remaining sugar.

Fold the caramel into the mixture while whisking.

Cook the cream for a nappe by stirring constantly with a wooden spoon (you can check the cooking by running your finger through the back of the spoon; if the trail remains visible, the cream is cooked).

Strain using a Chinese sieve.

Whisk continuously while the cream is still warm.

Whip the heavy cream.

Fold the whipped cream into the caramel sauce.

Pour this cream into an ice cream maker.

Freeze in the freezer for at least two hours.
