Prepare the roast: coat it with butter, season with salt and pepper, and sprinkle with Provence herbs.

Peel the potatoes, wash them, then cut them into large cubes.

Coarsely chop the tomatoes and onions.

Place the vegetables in a baking dish without forgetting to add the garlic cloves.
