    Boil the fava beans in a pot of boiling water for 30 seconds and use a sharp small knife to peel them.

    Blanch the tomatoes in boiling water for 2 minutes, then remove the skin, and discard the seeds.

    Heat oil in a skillet and gently fry the chorizo slices and diced bacon for 5 minutes over low heat.

    Remove from the pan to sauté the chopped onions and minced garlic.

    Cook on medium heat for 3 minutes without browning, stirring all the elements, then add the tomato pulp.

    Cook for another 3 minutes, pour in the white wine and let it cook for an additional 5 minutes.

    Add the fava beans, bouquet garni with salt and pepper. Add 5 cl of water with the chorizo and bacon bits, cover, and simmer gently for 8 to 10 minutes over low heat.

    Once the fava beans are cooked, remove the bouquet garni and add the chopped parsley.

    Serve hot or cold.
