    Wash the lemons and then zest one lemon.

    Squeeze the juice from 3 lemons.

    Crack and whisk the eggs in a mixing bowl. Add the lemon juice, zest, sugar, and cornstarch.

    Heat this mixture over a water bath without stopping to stir with a wooden spoon for 20 minutes on low heat.

    The cream should thicken.

    Pour the obtained cream into ramekins then chill.

    Preheat your oven to 200°C (Gas Mark.

    In a mixing bowl, add the flour, sugar, and butter cut into pieces.

    Mix by hand, crumbling with your fingertips to obtain a sandy texture dough.

    Roll out the dough on a baking sheet and bake for 15 minutes.

    Crumble over the ramekins. For a fresher result, chill your ramekins for several hours then prepare your crumble at the last moment.
