In a large mixing bowl, pour the flour and form a well.

Add the egg and two yolks, sugar, yeast, and salt.

Zest one lemon and cut the butter into small pieces then add them as well.

Mix everything until you obtain a smooth dough.

Form a ball then let it rest for 2 hours in the refrigerator.

Pit the apricots.

Place them in a mixing bowl and sprinkle with a tablespoon of sugar.

Preheat your oven to 180°C. Divide the dough into two: two-thirds and one-third.

Using a rolling pin, roll out the larger portion on a floured work surface.

Transfer it to a baking dish (approximately 20x20 cm), then add the apricots.

Cover with the second disc of dough.

Beat the egg yolk and milk together then brush the top of the dough with the mixture.

Using a fork, score the top of the dough.

Bake for 30 minutes, checking doneness with a knife.

Let it cool before unmolding.
