Fig Tartlets
Enjoy the first figs of the year in a delicious tartlette!

Start by making the pastry dough.

First, sift the flour into a mixing bowl and add the butter cut into very small pieces. Work quickly with your fingertips.

Add the sugar and vanilla sugar, mix well, then add the egg.

If the dough is too dry, work it with a fork to incorporate it properly.

Add 1 or 2 tablespoons of cold water if needed.

Form a ball and let it rest at room temperature for at least half an hour.

Preheat the oven to setting 7 (210 °C).

Butter tartlet molds.

Wash the figs, dry them, then cut them into slices.

Roll out the pastry on a thickness of about 5 mm with a rolling pin, line the molds with it, place the fig slices on this pastry base, brush with honey, and sprinkle with small pieces of butter.

Place your tartelettes in the hot oven halfway up and bake for 20 to 25 minutes at 180°C. You can enjoy these tartelettes while they are still warm.

They will be even more delicious if you serve them with whipped cream or vanilla ice cream.

You can also present them cold, which allows you to bake them in advance.

You can substitute honey with brown sugar, a very sweet fruit jelly (quince, blackberry, apple), or simply powdered sugar.
