Hare Paella
As they do in Valencia, cook this complete paella with rabbit and chicken!

Fry the chicken thighs and rabbit pieces cut in half in olive oil.

Add the chopped onions and sliced skinless bell peppers, let it simmer for a few minutes on high heat.

Add the sliced squid, stir in the rice.

Fold in the vinegar, season, and add the paella spices.

Mash water to the desired level and cook for about ten minutes, stirring occasionally.

Add the green peas, clean mussels, lobster tails, and shrimp, cook for about 5 minutes.

Remove from heat and add lemon juice, adjust seasoning, garnish with finely chopped flat parsley.

Serve immediately.
