Preheat the oven to 220°C (gas mark

and while doing so, clean the suckling pig with hot water and dry it with a towel

Cover the ears and tail with aluminum foil, then season (salt and pepper) and place the pig, legs up, in the roasting pan, drizzling it with some sunflower oil

Pour some coconut milk over the pig during cooking, every 20 minutes, and make incisions as soon as you see the skin puffing up to prevent it from bursting

Once the suckling pig's skin is golden brown, add pineapple chunks on top of the pig and in the pan, then continue cooking by regularly drizzling with coconut milk

After 1 hour and 15 minutes of cooking, it’s time to take out your suckling pig and enjoy.
