Wash the spinach well, drain them.

Sauté the shallots in 30 g of butter, add the spinach, season with salt and pepper and cook for about 10 minutes.

Lay out the lamb chop on a serving dish, cover it with the spinach.

Roll up the meat slice and secure it with kitchen twine, place it in a greased baking dish, sprinkle with butter pieces, and season with salt and pepper.

Bake in a preheated oven for about 15 minutes, let it cool down, cover with an aluminum foil sheet, and refrigerate it.
