Lamb Tajine with Apricots

Cut the meat into cubes.

Chop the garlic and mix it with the spices (cumin, ginger, chili powder), season to taste with salt and pepper.

In a tajine, place the meat with the chopped garlic mixture, 4 tablespoons of oil and 1/2 cup of water.

Stir everything well to coat the meat evenly.

Add roughly chopped onions, 6 sprigs of fresh parsley and 6 of fresh cilantro finely chopped.

Mix well.

Place on low heat with a diffuser in between.

As soon as the sauce starts to simmer, cover with the conical lid of the tajine.

Cook for 45 minutes on low heat.

Meanwhile, prepare the apricots by washing and stone them.

In a frying pan, sauté them in butter just until they are lightly browned.

Sprinkle with sugar and caramelize slightly.

In a skillet, toast the almonds dry.

At the end of 45 minutes of cooking, add the apricots and almonds to the tajine.

Gently mix and continue cooking for 30 minutes under cover.

Serve with couscous.
