Leek and Mushroom Crepes

For the crepe batter:

Sift the flour, put it in a bowl, beat the eggs and mix while adding a pinch of salt.

Slowly add milk while mixing to get a homogeneous result.

Pourse a small amount of oil into a frying pan, your crepe batter, and the rest is up to you!

For the filling:

Finely chop your leeks and mushrooms.

Melt a piece of butter in a pan, then add the leeks and mushrooms.

Sauté them, and add flour along with white wine while stirring.

Add seasoning (salt, pepper, nutmeg) and a cup of water, then cook on medium heat for about 20 minutes.

Fill the crepes with your preparation, and for a bit of crunch, don't hesitate to grill them in the oven for 5 minutes with a little gruyère.
