    Prepare a brown sauce.

    Add the cognac to it. Let it simmer on low heat.

    While that's cooking, cut the mushrooms (well washed) into quarters.

    Fry them in a little butter.

    Then mix them with the sauce and the truffles.

    Let it cook on low heat.

    Prepare your omelette into which you will incorporate the diced ham.

    To finish, add to the omelette the mushrooms and the sauce.
