Orange Chocolate Yule Log
Chocolate and orange are two perfect ingredients for preparing a Yule log.

Prepare the biscuit: in a bowl, beat 2 whole eggs and 2 yolks with 85 g of sugar for 5 minutes.

Then incorporate the flour and 2 stiffly beaten egg whites along with 25 g of sugar.

Spread this mixture on a sheet of baking paper.

Bake it for 10 minutes at 180°C (gas mark

5). Let the biscuit cool, then chill it.

Prepare the chocolate cream: melt together in a bain-marie the butter and the chocolate.

Set aside.

Soak the gelatin for 5 minutes.

Cook the sugar with 2 to 3 tablespoons of water until it thickens.

Incorporate the softened and drained gelatin into this mixture.

Pour this mixture over 3 whole eggs and beat until the preparation is completely cooled.

Add the melted butter and chocolate along with sifted cocoa powder, then fold in the cream previously whipped with an electric mixer for 3 to 4 minutes.

Spread this preparation on the biscuit (reserve some of it to cover the Yule log).

Sprinkle it with small pieces of candied ginger and orange peel coarsely chopped.

Roll up the biscuit.

Chill it.

For decoration: carefully clean a few tree leaves.

Melt the chocolate.

Brush one side of the leaves with the melted chocolate using a brush.

Chill them.

Cover the Yule log with the remaining chocolate cream.

Remove the leaves and place the chocolate imprints on a plate.

Sprinkle them with cocoa powder, then place the Yule log in the center of the leaves.
