Put the water, butter, sugar, and salt in a saucepan on the stove.

Bring to a boil.

Remove from heat and pour in the flour all at once.

Cook the dough over medium heat and stir constantly with a wooden spoon.

Continue doing this until it becomes completely homogeneous and detaches from the pan.

Let cool for 5 minutes.

Add the eggs one at a time using a wooden spoon.

Arrange the choux in a staggered pattern on a lightly greased baking sheet.

Dust the surface of the choux with beaten egg diluted in a tablespoon of cold water.

Cover the surface of the choux with granulated sugar.
